Dal Bati famous marwari dish

Ingredients

For dal:
2 cups - Rajma beans (soaked in water overnight with a pinch of soda bicarb)
3/4 cup - Whole black gram (urad) (soaked in water overnight with a pinch of soda bicarb)
3 Nos - Onions chopped finely.
2 Nos - Tomatoes, chopped finely.
2 tsps - garam masala powder.
2 tsps - Chilli powder.
1 tsp - turmeric powder
1 tbsp - Ginger-garlic paste.
2 Nos - Green chillies, slit lengthwise.
2 tbsps - cream
4 tbsps - Ghee (Clarified Butter)
1 cup - coriander leaves, chopped finely.
Oil to fry
Salt to taste.

For dumplings:
5 cups - Whole, wheat flour , sieved.
1 cup - Ghee, melted.
2 tbsps - Curd.
Salt to taste.


Cooking Instructions :

- Pressure cook rajma and black gram till it becomes soft.
- Heat 4 tbsps oil, Add onions and saute till brown
- Add ginger-garlic paste and tomatoes and saute
- Add all the masalas, beans and salt and simmer till well blended. The gravy should be thick.
- Pour over cream and ghee. Knead a soft dough with flour, ghee, curd, salt and just enough water. Roll into lemon-sized balls. Cover and keep for one hour.
- Then roast in batches on hot coals till puffed and golden outside and spongy inside. Keep hot.
- Garnish the dal with coriander leaves and slit green chillies. Dip hot dumplings in the dal while eating

Grilled Chicken In Gravy Recipe


Ingredients Boneless chicken, cut into 1” chunks (800gms). For Marinade:- Dried fenugreek leaves (1tbsp), saffron soaked in little milk (1/2tsp), garlic paste (2tsp), ginger paste(2tsp), thick fresh cream (2tbsp optional), hot spice mix or garam masala powder (2tsp), cumin powder (1tsp), red chili powder (1tsp), vinegar or lemon (4tbsp), yogurt (4tbsp), butter for basting (1tbsp), edible orange red color (a few drops), salt (to taste). For Gravy:- Butter / oil (2tbsp), dried fenugreek or methi leaves (1tbsp), finely chopped ginger and green chilies (2tsp), hot spice mix or garam masala (1tsp), red chili powder (1tsp), coriander powder (1tsp), cumin powder (1tsp), milk (2tbsp), finely chopped onions (2), finely chopped tomatoes (2).

Method of preparation:-
grilled-chicken-in-gravyTake a bowl, mix lemon juice, salt and red chili powder in it. Make small cuts on chicken chunks and put them in this mixture. Keep the bowl aside for about 1 hour. Then mix yogurt and the remaining ingredients of marinade in the bowl. Mix the chicken chunks properly in this mixture and keep the bowl in refrigerator for about 4 hours to marinate. Now skewer the chicken and place it in hot oven to grill for about 25 minutes until the chicken gets cooked. Rub the butter on the chunks and again roast them for about 8 minutes. Take a heavy bottomed pan, place it over heat. Heat butter or oil in it and then fry chopped garlic and ginger in it until they get golden brown. Then add onions in it and sauté them until they get soft and brown. Add tomatoes in it and cook them until the oil get separated. Add spice powder in the pan and fry them for few seconds. Now add the grilled chicken in it and add sugar and salt in it. Turn up the heat and gradually add milk in it and cook it by stirring regularly. Keep the chicken to simmer for about 10 minutes on low heat. When it gets ready then decorate it with chopped coriander leaves and serve it.



Fried Rice - a Basic Recipe for Fried Rice


Serves 4 to 6

This is a basic recipe for fried rice that you can add to as desired. If adding other ingredients, increase the number of eggs to 3.

Ingredients:

  • 1 - 2 green onions, as desired
  • 2 large eggs
  • 1 teaspoon salt
  • Pepper to taste
  • 4 tablespoons oil for stir-frying, or as needed
  • 4 cups cold cooked rice
  • 1 - 2 tablespoons light soy sauce or oyster sauce, as desired

Preparation:

Wash and finely chop the green onion. Lightly beat the eggs with the salt and pepper.

Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan.

Add 2 tablespoons oil. Add the rice. Stir-fry for a few minutes, using chopsticks or a wooden spoon to break it apart. Stir in the
soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled egg back into the pan. Mix thoroughly. Stir in the green onion. Serve hot.
